Lemon Thyme Chicken and Parmesan Crusted Tilapia

The past two nights I have tried 2 new recipes and wanted to share them because they, both, were SO good.

Lemon Thyme Chicken

What you Need:
2 Tbsp Fresh Thyme
1 Tbsp Kosher Salt
1/2 tsp Pepper
6 Skinless Chicken Breast, Halves
2 Tbsp Olive Oil
2 Tbsp Butter
2 lg. Garlic Cloves, Minced. (1 teaspoon from jar)
2 c. Chicken Stock
1 Tbsp. Corn Starch
2 Chicken Flavored Bouillon Cubes
1/2 C. Unsweetened Applesauce
1 Tbsp. Fresh Lemon Juice
1 Lb. Whole Wheat Spaghetti, Cooked Al Dente and Drained
 
What to Do:
Preheat Oven to 350 degrees
Mix Thyme, Zest, Salt and Pepper
Line Baking Sheet with foil and spray with cooking spray
Place chicken on sheet and brush both sides with olive oil
Season with Lemon Seasoning
Bake 30-40 minutes
Take out of oven and start on Sauce
Cook Butter and Garlic on Medium
Add all but 1/2 of stock
With the remaining stock mix in cornstarch and stir until dissolved. Add to sauce.
Add Applesauce, Bouillon Cubes, Lemon Juice. Cook for 5 minutes, stirring occasionally.
Transfer to blender and blend for 20 seconds.
Season with salt and pepper.
Lightly cover each breast with 2 tbsp of sauce.
Reserve remaining sauce to cover pasta.

I tossed a few grape tomatoes on top to add a little color. Kids ate it all up!
I put this recipe in to myfitnesspal.com. The serving size for this meal is 6 and it equals out to 387 calories per serving! Not too bad for a dinner time meal and is PLENTY filling and delicious!


Parmesan Crusted Tilapia

What you Need:
3/4 C. Parmesan Cheese
2 tsp. Paprika
1 Tbsp fresh parsley
6 Tilapia Fillets
Olive Oil

What You Do:
Preheat Oven to 400 degrees
Line Baking Sheet with Foil
Mix Parmesan Cheese, Paprika and Parsley
Season Fish with Salt and Pepper
Drizzle Tilapia with Olive Oil
Dredge through Cheese Mix
Place on baking sheet
Bake 10-15 minutes

Serves 6.
Calories: 178 Per Serving

This recipe was very quick and easy and we all 5 enjoyed it as well.
